Apart from an ageing D1X, I have a Phase One H20 back on a Fuji GX680, 16mp (square format). Looking at new equipment and seeing DSLR'S with resolutions of 18/21mp, would this better my H20 or is it a case of bigger pixels are always better as I have read in the past.

Bigger is better if you dont mind size weight cost speed of MF.
Bigger is important in pixel size
AND SENSOR SIZE
.
FFMF is well ahead of APS-C {5x image size} and FFDSLR {3X image size}.
The difference between a Canon 5D "classic" and 5DII besides movie mode and a few other features is only about 30 % more lateral resolution even tho it has 1.75 x more pixels.
